Bacon & Lentil Hearty Soup

10 slices of bacon cut to 1 in pieces
1 med onion chopped
2 carrots cut to 1 in pieces
1 large potato cut in 2in cubes
1/2 cup of lentils
4 cups of chicken stock
2 spring of rosmary
2 bay leaves
1 tablespoon whole pepper corns

Make a bouquet garni of the rosemary, bay leaves and whole pepper with cheesecloth.

Saute Bacon pieces in bottom of a pressure cooker 6 Qt or larger.

Add onions and saute for 1 min.

Turn off burner.

Add lentils, chicken stock and bouquet garni.
Put on pressure cooker lid and bring to high pressure.Reduce heat and cook at high pressure for 12 min.

Turn off burner and fast release pressure.

Add carrots and potatoes.
Put on pressure cooker lid and bring to high pressure.
Reduce heat and cook at high pressure for 8 min.

Turn off burner and fast release pressure.

Remove the bouquet garni and salt and pepper to taste.

Serve hot.
