Basic Chicken Soup

2 halves boneless chicken breasts
2 ribs of celery sliced
1 small onion chopped
3 carrots sliced
2 bay leaves
6 cups of chicken broth
1 tbsp oil
1 cup Rotini pasta
1 tbsp lemon juice
2 tbsp chopped parsley
4 button mushrooms sliced(optional)


Heat oil in uncover pressure cooker 6 qt or larger.

Add celery, onions, carrots and mushrooms(optional). Cook for 2 minutes.

Turn off burner.

Add chicken, broth and bay leaves.

Put on pressure lid and bring to high pressure. Reduce heat and cook at high pressure for 10 minutes.

Turn off burner. Fast release pressure. Remove chicken carefully to a cutting board. Add pasta.

Put on pressure lid and bring to high pressure. Reduce heat and cook at high pressure for 4 minutes.

Shread chicken.

Turn off burner. Fast release pressure.

Stir in chicken, lemon juice and parsely. Remove bay leaves and stir.
